Wood-fired pizza
Wood-firing adds a characteristic atmosphere to pizza preparation and allows you to utilise high temperatures inside the oven. Vesuv Oven is designed for outdoor use and is heated with firewood. Once sufficiently heated, you can place the prepared pizza onto the fireclay board. Cooking time depends on the temperature reached, the thickness of the dough and the quantity of ingredients used.
Fireclay slab for evenly baked dough
An essential part of the oven is the fireclay baking slab, which accumulates heat and subsequently transfers it to the bottom of the pizza. This helps create a well-baked and crispy base. Before adding the pizza, both the oven and the fireclay slab must be allowed to heat up sufficiently. During preparation, it is advisable to monitor the baking process and rotate the pizza as needed.
Separate base with wood storage space
The Vesuv oven features a two-piece construction, consisting of the oven itself and a separate base. The base is equipped with wheels for easier movement and lower storage space for firewood. This allows you to have your fuel ready right by the oven. The total height of the assembly is 149 cm, of which the base including the wheels measures 75.5 cm.
Practical equipment and oven construction
The steel structure of the oven is made of sheet metal with a thickness of 1.5–1.8 mm. The thermometer built into the oven allows you to monitor the temperature during both preheating and baking. The combustion chamber includes a cast-iron grate and a removable ash tray, which makes it easier to clear away residues after the wood has burned. The oven with the stand weighs approximately 60 kg, so it is important to place it on a firm, level, and stable surface.
What do we recommend buying?
For easy loading and removing of pizza, we recommend the Tratoria stainless steel pizza peel 30 × 30 cm with a silicone grip. The stainless steel working surface and wooden handle make it easier to handle the pizza during baking. When working with hot equipment, you will also appreciate heat-resistant grilling gloves. You can find more equipment in the grills and grilling category.
Care and maintenance
After baking, let the Vesuv oven cool down completely. Only then remove the ash tray and clear away the remains of the burnt wood. Clean the fireclay board gently according to the manufacturer's recommendations to prevent damage. Also regularly check the condition of the combustion chamber and the cast-iron grate. When not in use for long periods, it is advisable to protect the oven from adverse weather conditions.
Frequently Asked Questions
What fuel is used to heat the Vesuv oven?
The Vesuv oven is designed to be heated with wood. For baking, use suitable dry, clean, and chemically untreated firewood. Do not use varnished, impregnated, or otherwise chemically treated wood.
Why is there a firebrick stone in the oven?
The firebrick stone accumulates heat and transfers it directly to the bottom of the pizza during baking. This helps to ensure the dough is baked evenly and creates a crispy base. Therefore, allow it to heat up sufficiently before baking.
Is it possible to move the oven to another location?
Yes, the base is equipped with castors, which make handling the oven easier. However, the oven must be completely cool before being moved. Given the total weight of approximately 60 kg, it is necessary to ensure safe handling and a suitable surface.
How is ash removed from the oven?
The oven is equipped with a removable ash tray, which facilitates the regular cleaning of the firebox. Remove the ash only after the oven has cooled down completely and ensure that no hot embers remain.
