Which meat thermometer to choose
It depends on the cooking time. For a quick check of a finished piece, a penetration thermometer is sufficient, showing the temperature within a few seconds. Analog models feature meat type symbols on the dial and measure up to 120 °C, while digital versions can measure up to 300 °C depending on the model.
A wireless probe is ideal for long smoking and slow grilling. It remains in the meat throughout the process and sends the temperature to a display or a phone app, with a range of 20 to 200 metres depending on the model. Thermometers with two to six probes can monitor multiple pieces of meat simultaneously, and some even measure the internal temperature of the grill or smoker. An infrared thermometer measures the surface of a grate, pan, or pizza stone; it is not intended for measuring internal meat temperatures.
Traeger wireless probes work with Ironwood and Timberline grills. iGrill needles complement or replace the probe in iGrill devices and, together with the temperature control set, are part of the Weber grill accessories. Smoking temperatures by food type are summarised in the basics of smoking in a wooden smoker.
