Smoking chamber with a volume of 148 litres
The MIST 80 offers internal smoking chamber dimensions of 43 × 43 × 80 cm, which corresponds to a volume of approximately 148 litres.
Depending on the size and arrangement of individual pieces, it is possible to prepare 18–20 kg of meat or approximately 10–12 kg of home-made sausages in the smoker.
Six smoking rods and eighteen stainless steel hooks are part of the set. The rods can be arranged on two levels to adapt the space to the quantity and size of the food being prepared.
The smoker is suitable for smoking home-made sausages, lard, pork belly, pork neck and other meat specialties.
Robust spruce wood construction
The smoking chamber is made of spruce boards approximately 20 mm thick and is reinforced with a sturdy wooden frame.
Individual boards are secured with screws not only to the frame but also to each other. This design solution increases the strength and stability of the entire smoking chamber.
The smoker stands on a steel base 55 cm high, which provides stable support and separates the wooden chamber from the ground. Handles on the chamber and the base make it easier to handle the individual parts.
The construction is designed for long-term use and the possibility of repairs. If needed, we are happy to help you secure available spare parts.
Unburnt wood and an elegant black roof
This version preserves the natural light colour of spruce wood and its characteristic grain.
The exterior surface of the smoking chamber is treated with natural linseed oil, which helps protect the wood from moisture. The interior of the smoking chamber remains untreated.
A striking design element is the semi-circular black metal roof with a chimney and an adjustable damper. The look is complemented by decorative black fittings.
External metal parts are coated with a heat-resistant finish.
External XXL firebox for classic wood smoking
The smoker includes a large external XXL firebox measuring 45 × 25 × 25 cm, made of 1.8 mm thick steel sheet.
The larger firebox provides plenty of space for longer logs and makes it easier to add fuel during the smoking process.
Heat and smoke are generated outside the smoking chamber itself and enter it via a metal smoke flue.
The set includes two 50 cm smoke pipes and two elbows, allowing the firebox to be positioned according to the surrounding space.
For safe operation, it is always necessary to use both supplied smoke pipes.
The smoker's design also includes a deflector, which helps direct the smoke flow.
How can you smoke in the MIST 80 smoker?
MIST 80 is a classic wooden smoker designed primarily for warm and hot smoking.
As fuel, we recommend dry, debarked wood suitable for smoking, such as beech or alder. When smoking, it is important to maintain a moderate combustion intensity, add fuel regularly, and continuously monitor the temperature inside the smoking chamber.
Cold smoking is possible with the addition of suitable accessories, such as a DYMBOX or Old Way smoke generator, or after an appropriate modification of the smoke flue.
In its basic version, the smoker is not intended for direct cold smoking without further modifications.
Year-round smoking and proper moisture management
You can use the MIST 80 smoker throughout the year, including the colder months.
However, at lower outdoor temperatures, moisture condensation may occur on the non-insulated metal roof. Therefore, we recommend preheating the smoker and thoroughly drying the meat before placing it in the chamber.
In the initial phase of smoking, it is also important to allow excess moisture to escape through appropriate venting according to the smoking process.
Correct food preparation and regulation of smoke flow help limit unwanted condensation inside the smoker.
Quick assembly and easy handling
We deliver the smoking chamber pre-assembled, so you do not have to build it from individual boards.
During assembly, the individual parts of the smoker are connected, the base and metal roof are secured, and the external firebox is connected with the smoke flue.
Depending on the preparation of the individual parts, assembly takes approximately 10 minutes.
The total height of the smoker, including the base and chimney, is 172 cm. Thanks to the detachable construction, individual parts can be separated after cooling down and stored in a dry place.
Our step-by-step photo guide for assembling wooden smokers will also help you with the installation.
Smoker care and maintenance
For the longest possible service life, we recommend thoroughly cleaning the smoker after use and protecting it from long-term moisture.
It is advisable to treat the external wooden parts with natural linseed oil at least once a year. We recommend storing the smoker in a dry place or under a suitable protective shelter.
When smoking, it is necessary to safely collect dripping fat, for example, using a suitable stainless steel gastro container. The smoke flue and external firebox also require regular inspection and cleaning.
What do we recommend buying?
For more comfortable smoking, we particularly recommend:
-
Stainless steel fat dripper – gastro container for collecting fat and meat juices
-
Smoke generator to expand the smoker's capabilities to include cold smoking
-
A suitable protective cover for the smoker to limit the effects of rain, dust, and general dirt
Further equipment can be found in the smoker accessories category.
